AMIWO (Red paste) from BENIN
“Amiwo is the real traditional Benin recipe: we can’t tour without it.
Hopefully wherever we go we find great Benin Diasporas and a great cook. Amiwo
after a show we feel just like we’re in Benin.
AMIWO cooking
– 1 chicken, cut into pieces– 3 garlic cloves, chopped-1/4 l of oil– 2 onions, chopped– tomatoes– 20 g smoked Shrimps– 6 cups of corn flour– salt, cube and pepper– green hot chilis, chopped.
1. Take the chicken, and add to
it some salt, pepper and garlic, and “massage” it with theshrimp 2. Fry the pieces of chicken in
oil and set it aside.3. heat oil and add 4 chopped
tomatoes, two cups water and one boullion cube. Cook for 10 minutes, then add
salt, pepper and garlic, shrimp and the chili peppers 4. Add a second boullion cube
and cook for another 10 minutes 5. Add the flour to this
mixture, mix it well and regularly, with a wood spoon so that you get a strong
hard “paste.” Cover this for 10 minutes 6. Simmer the remaining four
tomatoes with water, onions, garlic, salt and pepper and the last boullion
cube. Serve the chicken with the paste and the tomato “sauce” on the side.
Amiwo is sweet and powerful!
